- 400 grams canned chickpeas, drained and rinsed
- 200 grams cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, finely chopped
- 100 grams feta cheese, crumbled
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Juice of 1 lemon
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
COOKING INSTRUCTIONS
- In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and mint.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients in the large mixing bowl and toss gently to coat everything evenly.
- Taste the salad and adjust the seasoning if needed, adding more salt, pepper, or lemon juice according to your preference.
