Mediterranean chickpea salad with vegetables
INGREDIENTS
  • 400 grams canned chickpeas, drained and rinsed
  • 200 grams cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • 100 grams feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
COOKING INSTRUCTIONS
  • In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and mint.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  • Pour the dressing over the salad ingredients in the large mixing bowl and toss gently to coat everything evenly.
  • Taste the salad and adjust the seasoning if needed, adding more salt, pepper, or lemon juice according to your preference.
  • Serve immediately or refrigerate for about 30 minutes to allow the flavors to meld together before serving.
